From my experience, I can tell you with confidence that Russet potatoes are the best. They have high starch content, which means that they absorb the frying oil really well. Other varieties of potatoes will cause the consistency of the fries to be very mushy.

2 – Equipment

The equipment is important too. A deep fryer is the best way to go. A deep fryer allows you to safely and easily cook the fries without having to be standing next to the stove the whole time. However, if you are not ready to buy a deep fryer, you can use a heavy-bottomed pot. I like using a pot when I make my French fries because it allows you to use less oil than a deep fryer does. The reason for that is that a pot allows the oil to reach the ideal temperature for cooking more efficiently.

3 – Oil Temperature

Oil temperature is another important factor. If the oil is not hot enough, the fries will absorb too much of the oil and will be very soggy. If the oil is too hot, the fries will burn and taste bitter. The best temperature for cooking French fries is 350 degrees Fahrenheit. To figure out the ideal temperature for your oil, you need to consider two different factors: the type of potatoes that you are using and the length of time that you are going to cook the fries. Russet potatoes absorb oil at a much slower rate than other potato varieties. So if you are using those, you should cook the fries at a lower temperature (325 degrees Fahrenheit) for a longer time (approximately 15 minutes). If you are using other potato varieties, you should cook them at a higher temperature (375 degrees Fahrenheit) for a shorter amount of time (approximately 10 minutes).
